New SWISS Winter Menu

During the winter months, SWISS will be offering their First and Business class passengers an exclusive inflight dining menu from el paradiso Mountain Club and the Lej da Staz restaurant in the heart of the Engadine. As the latest chapter in the award-winning “SWISS Taste of Switzerland” inflight dining programme SWISS is putting a spotlight on the cuisine of Canton Grison in Southeast Switzerland and will be served from the 4th of December to the beginning of March 2020.

The new menu has been created by Frank Schuster, chef de cuisine at the Lej da Staz restaurant and the el paradiso Mountain Club near St. Moritz. Together with his team, have created seasonal dishes and classics ranging from the rustic to the exclusive, all coupled with sweet treats from the house patisserie.

Passengers in First Class can choose from a selection of seasonal specialities from the el paradiso Mountain Club, situated above St. Moritz at an elevation of 2,181 metres. To start guests can enjoy an allegra-poke bowl with barley and salmon trout and a fig mustard dressing. Followed by the legendary “Meat Love” meatloaf with morel sauce, the meal is finished off with a mini version of the millefeuille, a layered puff pastry cake with crème pâtissière.

Long-haul passengers in Business Class get the chance to enjoy delights from the Lej da Staz restaurants, which stands by idyllic Lake Staz near St. Moritz. Guests will enjoy smoked char with barley salad to start, braised beef in red wine sauce with polenta and alpine cheese for main followed by a wintry sweet chestnut mascarpone mousse on a white chocolate and pear slice for dessert.

To accompany the Canton Grison menu SWISS has also selected local wines and cheeses. The First and Business Class cheese selection includes a Ftan organic mountain cheese and an Engadin Forte. The First Class wines include a 2018 Chardonnay white from the Davaz estate and a 2017 Trocla Nera Pinot Noir red from the Obrecht winery, while the Business Class wine list extends to a 2018 Pinot Noir Spätlese Barrique red from the Von Salis winery in Malans and a 2018 Riesling-Silvaner white from the Hermann estate.
